Die Backstube Profanter, gegründet 1967, verzichtet vollkommen auf industrielle Vor- oder Fertigmischungen; die Backwaren sind demnach frei von chemischen Zusatzstoffen. Gebacken wird nach jahrzehntealten Familien- und Hausrezepten, die von Generation zu Generation weitergereicht werden. Ausgewählte Zutaten, naturbelassenes Getreide und natürliche Rohstoffe werden mit Liebe zum Handwerk zu aromatischen Backwaren in Bio-Qualität verarbeitet. Als erste Bäckerei des Eisacktals lässt die Natur-Backstube Profanter seit 2009 von einheimischen Bauern wieder Roggen und Dinkel für typische Südtiroler Brotsorten anbauen.

Im Jahre 1920 begann Näckler Hans Senior zunächst mit der Pacht eines kleinen Bäckereibetriebes in Welschnofen. 1990 übergab er seinen beiden Söhnen Erwin und Arnold Näckler den Betrieb. 1996 trennten sich die Brüder: Erwin übernahm die Frischbrotproduktion und Arnold spezialisierte sich auf die Herstellung von Schüttelbrot. Die Trennung sollte in erster Linie der Qualitätsverbesserung zugute kommen. Arnold Näckler übernahm die Grundsätze seines Vaters: Tradition und erlesene Zutaten als Grundbausteine für qualitativ hochwertige Produkte. Dies sind auch heute noch die wesentlichen Säulen der Firmenphilosophie von Näckler Schüttelbrot. Arnold Näckler erweiterte sein Sortiment um 4 weitere Sorten: Schüttelbrot mit Zwiebel, Schüttelbrot mit Vollkorn und Sesam, Schüttelbrot mit Peperoncino und Knoblauch- feine Kräuter und das BIO-Schüttelbrot.

Im Jahre 1920 begann Näckler Hans Senior zunächst mit der Pacht eines kleinen Bäckereibetriebes in Welschnofen. 1990 übergab er seinen beiden Söhnen Erwin und Arnold Näckler den Betrieb. 1996 trennten sich die Brüder: Erwin übernahm die Frischbrotproduktion und Arnold spezialisierte sich auf die Herstellung von Schüttelbrot. Die Trennung sollte in erster Linie der Qualitätsverbesserung zugute kommen. Arnold Näckler übernahm die Grundsätze seines Vaters: Tradition und erlesene Zutaten als Grundbausteine für qualitativ hochwertige Produkte. Dies sind auch heute noch die wesentlichen Säulen der Firmenphilosophie von Näckler Schüttelbrot. Arnold Näckler erweiterte sein Sortiment um 4 weitere Sorten: Schüttelbrot mit Zwiebel, Schüttelbrot mit Vollkorn und Sesam, Schüttelbrot mit Peperoncino und Knoblauch- feine Kräuter und das BIO-Schüttelbrot.

Es war demnach nur eine Frage der Zeit, bis ein getrocknetes Fladenbrot, wie es das Schüttelbrot ist, entstand. Den Namen verdankt das Schüttelbrot seiner ungewöhnlichen Herstellungsmethode, die auch noch heute in einigen traditionsbewussten Betrieben angewendet wird. Hierbei werden die Teiglinge mittels eines runden Brettchens "flach geschüttelt" und anschließend fertig gebacken. Auch das richtige Knacken des Schüttelbrots will gelernt sein: die Packung aufschneiden, das Schüttelbrot rausnehmen und mit einem leichten Faustschlag brechen. Ausgewählte Zutaten, naturbelassenes Getreide und natürliche Rohstoffe werden mit Liebe zum Handwerk zu aromatischen Backwaren in Bio-Qualität verarbeitet. Als erste Bäckerei des Eisacktals lässt die Natur-Backstube Profanter seit 2009 von einheimischen Bauern wieder Roggen und Dinkel für typische Südtiroler Brotsorten anbauen.

Im Jahre 1920 begann Näckler Hans Senior zunächst mit der Pacht eines kleinen Bäckereibetriebes in Welschnofen. 1990 übergab er seinen beiden Söhnen Erwin und Arnold Näckler den Betrieb. 1996 trennten sich die Brüder: Erwin übernahm die Frischbrotproduktion und Arnold spezialisierte sich auf die Herstellung von Schüttelbrot. Die Trennung sollte in erster Linie der Qualitätsverbesserung zugute kommen. Arnold Näckler übernahm die Grundsätze seines Vaters: Tradition und erlesene Zutaten als Grundbausteine für qualitativ hochwertige Produkte. Dies sind auch heute noch die wesentlichen Säulen der Firmenphilosophie von Näckler Schüttelbrot. Arnold Näckler erweiterte sein Sortiment um 4 weitere Sorten: Schüttelbrot mit Zwiebel, Schüttelbrot mit Vollkorn und Sesam, Schüttelbrot mit Peperoncino und Knoblauch- feine Kräuter und das BIO-Schüttelbrot.

Die Backstube Profanter, gegründet 1967, verzichtet vollkommen auf industrielle Vor- oder Fertigmischungen; die Backwaren sind demnach frei von chemischen Zusatzstoffen. Gebacken wird nach jahrzehntealten Familien- und Hausrezepten, die von Generation zu Generation weitergereicht werden. Ausgewählte Zutaten, naturbelassenes Getreide und natürliche Rohstoffe werden mit Liebe zum Handwerk zu aromatischen Backwaren in Bio-Qualität verarbeitet. Als erste Bäckerei des Eisacktals lässt die Natur-Backstube Profanter seit 2009 von einheimischen Bauern wieder Roggen und Dinkel für typische Südtiroler Brotsorten anbauen.
